Alfredo Sauce

  

            Ingredients:

             1/4 cup butter

             1/2 cup heavy cream or half and half cream

             1 cup whole milk

             4 Tbsp. Flour

             1 tsp. kosher salt

             1 clove garlic, smashed and minced

             1/4 cup grated parmesan cheese

             1/2 tsp. freshly ground pepper (optional)

 

 

                                       Pasta

 

         Bring a large pot of water to a boil. Add the pasta and cook until it is tender but still firm to the bite.

          Drain noodles and place back into large pot . Drizzle 1-2 Tbsp. of olive oil and season with 1/2 tsp. salt. Gently mix together.

 

                                       Sauce

  1. Make a Roux , by melting butter, then adding in 4 Tbsp. of flour.
  2. Stir the butter/ flour mixture to make a light colored roux. Add cream, milk, salt and garlic in deep pan. Bring to a mild boil.
  3. Turn heat to low, so not to burn sauce. Add noodles to the sauce, and toss to coat. At this time, add the 1/4 cup parmesan cheese and continue to stir gently to incorporate cheese in to sauce.
  4. Season to taste. Place selected type of meat on top of noodles and serve.
