
Banana Bread
1 ½ sticks butter
1 ¾ cups sugar
5-6 ripe bananas
4 eggs
2 ½ cups all
purpose flour
1 tsp.
salt
2 tsp.
baking soda
1 Tbsp. Vanilla
Extract
½ cup raisins, (chopped macadamia nuts, walnuts or chocolate chips. optional)
Cream butter and sugar in a large mixing bowl. Add eggs one at a time, beating them in on medium speed with electric mixer. This will create a fluffy mixture. Beat in mashed bananas.
Measure dry ingredients in a separate bowl and mix into banana mixture, only until all flour is moistened. Use a wooden spoon. Do not over mix
Bake in a greased and floured 9X13 pan.
350 degrees for 45 minutes or until
done.
