
Blueberry Muffins
Ingredients:
½ cup of butter or margarine
1 ¼ cups of sugar
2 eggs
2 cups of flour
2 teaspoons of baking powder
½ teaspoons of salt
½ cup of milk
1 teaspoon of lemon extract
2 cups of fresh, frozen blueberries, or 1 cup dried
Crumb Topping: Optional
½ cup sugar
1/3 cup flour
¼ cup butter
Cut in crumb topping ingredients
Instructions:
1. Preheat oven to 375 degree F
2. Grease a pan with a bit of butter or put paper liners in the muffins cup.
3. In a large bowl, beat the butter or margarine and sugar. Then add the eggs one at a time, beating well after each one.
4. In a separate bowl, sift the flour, baking powder, and salt.
5. Add this to the first mixture, alternating with the milk.
6. Blend in the lemon extract.
7. Gently fold in the blueberries.
8. Pour the batter into the muffin cups to fill 2/3rds full. Top each muffin cup with crumb topping. Bake at 375 for 25-30 minutes.
9. Let the muffins cool in the pan for about 30 minutes before removing
Makes 6-12 muffins, depending on the size of the muffin cup.
