
Carne Guisada
Ingredients:
3 lbs cubed Beef Stew Meat or Chuck Pot Roast
Salt & pepper to taste
1 onion diced
1 large green bell pepper diced
3 minced garlic cloves
4 Roma tomatoes or 1 can stewed tomatoes
4 tbsp flour
4 tsp chili powder
1 1/2 tsp ground cumin
1 tsp oregano
4 cups beef broth
2 tbsp tomato paste
Sear meat in hot skillet/pan, till browned. Set aside
In same pan, add oil and sauté onion, garlic and bell peppers
Add meat back to pan, add flour and cook through.
Add tomato paste, tomatoes, cumin, oregano, bay leaf, chili powder. Stir and combine
Pour in broth and heat to a simmer. Simmer on low for 45 minutes or until meat is tender.
Season to taste
Serve with baked beans, refried beans and floured tortilla.
