
Chicken Black Bean with Vegetables
6 boneless chicken thighs cut into 2 inch pieces.
1 green bell pepper, cut into 2 inch pieces
1/2 round onion, 1 inch pieces
1 large carrot, 1 inch diagonal rolled cut
4 large fresh mushrooms 1/2 inch slices
Marinade for chicken
1 Tbsp. shoyu
1 Tbsp. oyster sauce
1 Tbsp cooking sherry
1 Tbsp. sesame oil
1 Tbsp. corn starch
1 tsp. baking soda
Sauce ingredients
2 Tbsp. fermented black beans, soaked in water for 15min, drained, slightly crushed
1 Tbsp. oyster sauce
2 Tbsp. shoyu
2 tsp. sugar
2 Tbsp. water
3 cloves minced garlic
1 Tbsp. minced ginger
1 Tbsp. sesame oil
1. Prep vegetables, set aside
2. Marinate chicken, set aside
3. Combine all sauce ingredients
4. In a large wok heat some oil to sauté chicken.
5. When chicken is done, add all vegetables, cook for 1-2 minutes.
6. Add sauce ingredients and stir in.
7. Mix a slurry of cornstarch and water. Add enough to create a gravy to coat everything.
8. Taste and adjust. Garnish with Chinese parley.
