
Corn Chowder
Ingredients
2 cups milk
1/2 can Niblets corn
1/2 can Cream corn
3 stripes of bacon (minced)
1/2 cup diced celery (1 stalk)
1/2 round onion (minced)
2 medium potatoes ( peeled and diced, 1/2 inch cubes)
1/4 cup butter ( 1/2 stick)
1 tsp. salt
2 Tbsp. flour mixed with 1/4 cup milk (thickening agent)
Stir well to eliminate lumps.
Directions:
1. In a medium size sauce pan, brown bacon till crisp, drain fat .
2. Add butter, onions, celery and potatoes. Cook until onions, celery
are translucent.
3. Turn heat to medium and add milk, continue stirring to prevent milk
from burning.
4. Add whole corn and cream corn.
5. Let simmer on low until potatoes are done. Potatoes will be soft and
break easy.
6. When potatoes are soft, thicken with milk/flour mixture. Salt and
pepper to taste.
