
Crispy skin roast pork
2lb. piece belly pork
Seasoning rub
2 tsp. sugar
1 tsp. kosher salt
1 tsp. Chinese 5 spice powder
1/2 tsp. black pepper
Combine rub seasoning set aside.
Skin side seasoning
White vinegar
Hawaiian salt
1. In a large straight sided pan, fill with water and bring to a boil.
2. When water boils, place pork in water and cook, turning occasionally
to cook both sides. Continue simmering pork for 15 minutes.
3. Remove pork and pat dry with paper towels.
4. Score underside of pork 1/2 inch deep about 1 inch apart.
5. Rub seasoning all over and inside of slices to the underside of pork.
Do not get seasoning on the skin.
6. Place pork skin side up on a broiler pan. Pat dry the skin and make sure it
Is clean and dry.
7. Using a fork or sharp multi pointed tool, prick tiny holes in the skin.
8. Brush skin with vinegar and sprinkle Hawaiian salt on top.
9. Ready for roasting.
Air Fry Roasting
1. Preheat oven to 325 degrees.
2. Place broiler pan in the middle center of the oven.
3. Airfry for 40 minutes.
4. At 40 minutes, set to broil.
5. Set oven to low broil for 10 minutes.
6. After 10 minutes, set oven back to 325 roast. Roast for 15 minutes.
7. After 15 minutes, set oven to low broil again for 10 minutes. This is where
the skin gets crispy.
8. Monitor this last stage of roasting. Try not to let the skin char too much.
9. Remove from oven and let cool. Do not let cool in the oven.
10. Cut skin side down. Follow the cuts made before roasting.
