
Cucumber Salsa
4-6 large Japanese cucumbers
1/2 red onion
1 large tomato
1/3 cup finely minced cilantro
1 can niblet corn (drained)
1 cup sweet chili sauce (MAE PLOY brand)
1. Using a food processor, chop cucumbers into fine pieces, but not puree.
Place into a large bowl.
2. Process the tomato and onion, add to cucumbers.
3. Hand mince cilantro, add to bowl.
4. Add corn and chili sauce. Stir to mix.
5. Serve with tortilla chips.
