Curry Rice with Cranberries

 

3 Tbsp  Olive oil

2 Tbsp (or to taste)   Curry spice (recipe provided on website)

1 Tbsp  Garlic-minced

½ diced round onion

1-2 Tbsp Cilantro-leaves and stems, chopped separately

2 cups  Jasmine Rice-cooked

¼ cups Cranberries or rais

¼ cups Green onion stalks-sliced

1. Put olive oil in pan.  When oil is heated, add garlic, onion, Curry spice, Cilantro stem

    and cranberries.

2. Cook until garlic is done. Add rice. Mix well together. Add green onions  

    and cilantro leaves to the rice and mix again. Taste rice and adjust seasoning. Serve. Quick and so easy!


Variation-Sprinkle toasted pine nuts or sliced almonds on top of rice; instead of using cranberries, substitute shrimp, Chicken, or pork, or mushrooms and red bell peppers.
