Focaccia


Ingredients


Dough

  • 1 1/4 cups warm water (between 110 to 115 degrees)
  • 1 tablespoon sugar
  • 2 tsp. yeast
  • 3 1/4 cups all-purpose flour (you may need more to achieve the smooth elasticity)
  • 1 tsp. kosher salt
  • 2 tablespoon olive oil
  • 1 tablespoon. Italian herbs
  • 2 tablespoons grated Parmesan
  • 1 egg
  • 1 tsp. garlic powder
Directions
In a small bowl, dissolve the sugar in the warm water. Sprinkle the yeast over the mixture and let stand for 10 minutes, to bloom (it should begin to foam). Add egg, olive oil. 
In the mixer bowl with the dough hook attached, add 3 cups of flour, salt, herbs, parmesan, garlic powder and yeast mixture. Slowly turn it on and work the dough together. Turn it up to medium and mix for 5 minutes. If the dough is sticky, continue mixing and gradually add the remaining flour. 
Spread the dough out on a oiled sheet tray and let rise for 45 minutes.
Using fingertips or knuckles, make dimples in dough.  
Brush virgin olive oil over top surface of dough, sprinkle additional herbs and parmesan cheese and little kosher salt.
Bake until browned and cooked through and let cool. About 15-20 min . Broil top to brown.  Let cool .
