
Garlic Chicken
5 lbs chicken thighs
1 cup flour
oil for frying
Sauce:
1 cup shoyu
1 cup sugar
3/4 cup water
5-7 cloves of minced garlic
1. Combine all sauce ingredients and and mix well. Set aside.
2. Debone chicken and cut into 2 inch cubed pieces.
3. Place flour in a clean plastic bag, and coat chicken. Coat about 10 pieces at time.
4. In a large skillet, heat oil. Dust excess flour from chicken and fry chicken pieces. Cook chicken until lightly golden brown.
5. As each piece is done remove and submerge in sauce, right away, as the hot surface will allow the garlic sauce to caramelize onto it.
Dip chicken in sauce quickly, remove and place on serving platter.
6. Garnish with chopped green onions. If get. But no need.
