Check for good  kokui nut using water. If float , it is bad. Sinkers are good.

Can crack first then roast or can roast in shell in oven.

Always roast single layer of nuts.

Toss as it roast.

Roast for 1 hour or more all depends on the color. 250 degrees.

 

After roasting grind in meat grinder.  While grinding, add Hawaiin salt. Chili pepper flakes can also be added to create hot flavor.

 Store in a clean, tight seal jar in the freezer.
