Karaage
 
Chicken thigh meat cut into 2X2 inch pieces
1 Tbsp. Shoyu  
1 Tbsp. Sake
1 Tbsp. Mirin
2 tsp. minced/grated ginger
2 tsp. minced/grated garlic

Combine all season ingredients in a bowl
Marinate chicken meat with all the seasoning. Let sit for at least 1/2 hour, longer and over night better.
 
1 Cup Potato Starch
Measure about 1 cup potato starch, into a gallon size zip lock bag. Place about 5-6 pieces of chicken in with potato starch
and shake to coat. dust off excess and place on large tray. Coat all chicken. 
Heat enough oil  to allow chicken to be submerged when deep frying.  Deep fry chicken pieces until golden brown. 
Remove to a paper towel lined pan,.
