
Luau Moko
Ingredients:
Okinawan Mashed potatoes
Kalua pig
Poi
Lomi Salmon
To make the Okinawan mashed potatoes. Boil Purple Okinawan potatoes until cooked through, peel and mash. Using some coconut milk, blend together with potato to create a smooth, firm consistancy.
Servings sizes are individual.
To assemble the Luau moko, place a large scoop of mashed potatoes in a bowl. In order put portions of kalua pig, poi and lomi salmon. Garnish with chopped green onions if desired.
Dig in and enjoy all the Hawaiian food in each bite.
