Pa ’akai Seasoning Salt

 
 
 
5 Lb. Hawaiian Salt
1/2 cup whole peppercorn, coarsely ground
1 cup minced ginger
1 cup minced garlic
 
 
Directions:
 
1. In a large wok, heat salt until it is hot.
 
2. Add ginger, garlic and peppercorns. Stir with large wooden spoon. Reduce heat and
    continue to stir until fresh ingredients are all dehydrated.
    It is important that all moisture is gone, to prevent mixture from caking up and
    getting solid during storage.
 
3. Other spices that are dried , can be added when the salt mixture has cooled a while.
     Adding them in later when the salt is warm or cool will prevent them from burning
     and changing or losing their flavor.
 
Other spices that can be added:
 
 ground chili pepper, paprika, onion powder, cayenne pepper.
 
 
4. When salt mixture is cool, bottle or store in airtight containers. 

To make a lot:

15. lbs. medium or fine grain Hawaiian salt
 Minced Garlic, use tofu block container, filled, as measurement
 Minced Ginger, use tofu block container, filled, as measurement
1 cup Course ground black pepper
