Pancit

 

 

 

8 oz. package Bihon rice vericilli

1 cup boiled, shredded chicken meat

2 Tbsp. minced garlic

½ onion, sliced

½ cup chopped, green onions

½ cup julienned carrots

2 Tbsp. veg. oil

2  Tbsp. shoyu

1 cup chicken broth or equivalent using chicken powder

pepper to taste

Cabbage, shredded 

1/4 lb. cooked shrimp (optional)

Snow Peas (optional)

 

 

  1. Soak rice noodles 15 minutes or until soft.
  2. Boil and shred chicken meat. Set aside.
  3. In a large non-stick wok, heat oil and sauté onion, garlic and carrot.
  4. Add chicken meat, and shrimp(optional),  continue to sauté for a minute. Remove and set aside all stir fried ingredients
  5. In the same wok, pour in 1  cup water and chicken broth. When broth comes to boil, add in noodles and stir gently. Add back the stir fry. 
  6. Season pancit with shoyu, pepper to taste.
  7. Add green onions. Taste and adjust flavor.
