
Papaya Salad
6-8 cups of julienned green papaya
I used a large greenwatermelon papaya and grated it using a Japanese Benriner Slicer.
1 large carrot, julienned
1 Japanese cucumber, julienned
2 cups bean sprouts
1/4 cup fine chopped cilantro
Dressing
Mae Ploy Sweet Chili Sauce or your own favorite ( Asian section of supermarket)
Toss all vegetables in a large bowl. Portion salad servings.
Drizzle desired amount of dressing on individual servings of salad.
Remaining salad can be sealed in covered container and kept in refrigerator for several days. Do not mix dressing with salad to be stored. Dressing will cause vegetables to wilt and become soggy.
