
PIZZA
Crust
3 1/2 cups flour
1 tsp. salt
1 Tbsp. virgin olive oil
1/2 tsp. dry yeast (this amount of yeast will rise the dough but not so bready)
1 1/4 cup lukewarm water
1. Preheat oven to 375 degrees.
2. Measure flour into a large mixing bowl.
3. In glass measuring cup combine warm water, sugar, salt, oil.
4. Add yeast to water mixture and stir with a fork.
5. Pour water-yeast mixture into flour. Mix and knead dough until
smooth.
6. Shape dough into a ball and knead in the bowl, no need mess up counter.
Grease bowl a little with olive oil. Let dough rest and rise for 1 hour.
OR use a gallon ziplock bag sprayed inside with non stick butter spray.
Put dough in bag and refrigerate. Use dough the next day.
7. Lightly grease pizza pan and sprinkle with corn meal. This will prevent
the dough from sticking.
8. Roll out dough as large as the pan using. Or press dough flat within the ziplock bag, then cut bag open ,
flop dough on to pan and stretch to shape. dough can fit a pan as large as 16 inches.
Pizza Sauce
8 oz. tomato puree
1/2 t. kosher salt
1/8 tsp. pepper
1 Tbsp. olive oil
1 tsp. oregano leaves
1 clove garlic smashed and minced
Combine all ingredients in a 4 cup glass measuring cup. Cover with plastic wrap and microwave for 1 minute. Might not need to use all the sauce made. Use enough sauce to coat the dough, do not flood the dough with sauce.
Topping
shredded mozzarella cheese
pepperoni, sliced thin
other toppings of your choice may be added.
Using a cheese grater, shred cheese on a large plate.
Assembling Pizza
1. Spread sauce over pizza dough. Do Not flood the dough, use enough
sauce to coat the dough.
2. Sprinkle cheese over sauce.
3. Place pepperoni over cheese.
Bake Pizza in a preheated oven at 350 degrees. Pizza is done when, crust is slightly brown and cheese starting to bubble.
Baking
For best results, a gas oven works well to produce a crispy bottom crust. Place pan directly on to the floor panel inside the gas oven. Bake crust for 7-10 minutes, then move pizza to middle rack to finish. As soon as cheese is bubbling and toppings are cooked, it is done.
