
Portuguese Bean Soup Ingredients: 1 portuguese sausage, sliced1/2 cup diced carrots2 potatoes, diced1/2 round onion, chopped3 cups of water1 can (8oz.) Tomato sauce1 can stewed tomatoes1 can kidney beansSalt and pepper to taste 1. In a large sauce pan or stock pot, brown sausage over low to medium heat for about 1 minute , stir sausage to cook both sides. Excess fat may be removed. 2. Add onions, carrots and potatoes and saute for another minute, at high heat. 3. Add all other ingredients into pot and bring to a boil then lower heat to a simmer, cover at low heat. 4. Simmer for 20 minutes. Season with salt and pepper to taste.
