
Quinoa Salad
2 cups cooked, cooled Quinoa, prepare according to package
1 medium Japanese cucumber, diced
1 cup diced red, orange or yellow bell pepper
1 cup diced green bell pepper
1 large tomato, diced
1 can corn niblets, drained
1 can black beans, drained and rinsed
1 cup frozen edamame
1/4 cup chopped cilantro (optional)
1/2 cup sliced black olives (optional)
Combine all ingredients in a sealable container.
Mix all ingredients together.
Refrigerate to get salad cold.
To serve, salad maybe eaten plain or drizzle on your favorite salad dressing.
For a fancier presentation add some salad shrimp to the Quinoa Salad.
