
Salsa
4 cans (14.5 oz. each) Diced tomatoes or Fire Roasted Diced Tomatoes
1/2 medium onion, minced
1/4 cup chopped green onion
3-4 cloves minced garlic
1 tsp. cumin powder
1/2 cup chopped cilantro
2 tsp. garlic salt (kosher, ok if no more garlic salt)
2 tsp. sugar
2 tsp. tobasco sauce
1 tsp. ground red pepper
Other heat items you could add:
cayenne pepper and/or minced jalapeno to taste.
bell pepper if you have any on hand, but not necessary.
If you desire a more smooth salsa, add 1, 8oz. can tomato sauce
If you want to use fresh tomatoes, 6-8 large ripe tomatoes, diced, should be equivalent.
Mix all ingredients. Store in refrigerator.
Pico De Gallo
Simple Mexican Salsa
5 large ripe tomatoes. Diced petite
1/2 round onion, minced (white or red or yellow)
1 full cup finely chopped cilantro
1 tsp. kosher salt
Juice from 1 lime
1 finely mince green chili (optional)
1 Tbsp. Tobassco or any Mexican hot sauce.
