
Blueberry Scones
Ingedients:
2 cups flour
1/2 tsp. salt
1 Tbsp. baking powder
3 Tbsp. sugar
1/4 cup + 2 Tbsp. shortening
1/2 cup milk or sour milk, buttermilk
2 eggs, beaten
2 tsp. lemon extract
1/4 cup dried blueberries or any other dried fruit.
1. Preheat oven to 400 degres.
2. Combine all dry ingredients in a mixing bowl.
3. Cut in shortening, until mixture is coarse. Add blueberries after cutting in shortening.
4. Combine the milk and beaten eggs.
5. Pour milk mixture into dry ingredients. Mix just until dry ingredients are moistened.
Do not over mix.
6. Using two large spoons portion dough onto ungreased cookie sheet or parchment
paper.
7. Bake at 400 degrees for 12-15 minutes.
