Somen Salad
 
 
Ingredients:
Somen noodles
4 cups lettuce (shredded)
1 Kamaboku fish cake (slivers)
2 Cucumber (julienne)
1/2 cup green onions (sliced)
3 Scrambled egg ( fried in a sheet and sliced)
1/2 cup strips of ham 
 
Dressing:
3 Tbsp. sugar
1/4 cup canola oil
1 Tbsp. lime juice
2 Tbsp. shoyu
 
 
1. In a medium sauce pan bring , water to a boil.

2. Place somen in boiling water and stir occasionally to present somen from sticking                        
     to the bottom.

3. Cook somen till just tender, do not over cook, somen will become mushy. 

4. Drain somen in colander and rinse with cold tap water.

5. Before somen dries, place in bowls in a swirled nest arrangement.

6. Prepare other ingredients accordingly.

7. Prepare dressing by mixing all dressing ingredients in a measuring cup or medium
     bowl. Mix.

8. To assemble salad, top with lettuce,egg, fish cake, ham, cucumber, green onion and                        
     dressing.
