Tom Kha Gai

Coconut chicken lemon grass soup

Ingredients:

1/2 lb Chicken meat raw, sliced into 1 inch thin strips

4 cups Chicken broth or 4 cup water and 3 Tbsp. Chicken powder

2 cans Coconut milk

Lemon grass stalks, 3 stalks, cut some into thin julienne to leave in soup. large stayks,    

            remove after cooking.

Kafir lime leaves, julienne thin

Straw mushrooms, 1 can

Ginger, 3-4 slices

Round onion, sliced thin

Green onion, thin slivers

Lime juice, 1 fresh lime or 3 Tbsp. bottle lime juice

Chili pepper (optional)

Basil leaves, Thai or sweet, chiffonade

Patis Tbsps. to taste

Grated carrot for color (optional)

Additional items to put as garnish

Shredded cabbage

Cilantro

1. In a medium/ large pot bring broth or water to a boil. Add i chicken meat.

2. Cook throughly till done.

3. Add coconut milk, bring to simmer.

4. Add remaining ingredients

5. Simmer, season to taste.

6. Garnish and serve.
