Vietnamese Summer Rolls

 

Ingredients: 
For the rolls


Pork belly or boiled, thin sliced pork

Small shrimps, about ½ lb
Rice vermicelli , cooked according to package and cooled
15 pieces rice paper round


Fresh greens:

Lettuce leaves

Julienned cucumber

Cilantro

Thai basil leaves (optional),

 

Round rice wrapper sheets

  1. immerse rice sheet in water to coat. Place on tray and arrange filling. Start with a piece of lettuce, then noodles, cucumber, sprig of cilantro or basil leaf. Arrange ingredients in a row not a mound.
  2. Roll edge closest to you 1 turn. Fold 2 sides inward to center. Continue to roll the rest, gently but tight.
