
Fried Yaki Soba Noodles
Ingredients:
Yaki Soba (Japanese frying noodles) or Pancit (Filipino frying noodles)
Sun Noodle Brand, H&U Ltd. Different cost but basically the same noodle.
Pancit cheaper. 140 grams/person
Portuguese sausage ( 1/8 inch slices and halved) or SPAM
Cabbage (cut into ½ inch thick)
½ cup carrots (julienned ¼ inch thick)
4 stalks of green onions (chopped 1/8 inch length)
1-2 tsp. Soup base (used to season noodles)
2-3 Tbsp. Sesame seed oil
Pepper to taste
Shoyu (optional) or 1 Tbsp. Lee Kum Kee Braising sauce
Directions:
1. In a work, skillet, or large sauce pan, saute sliced meat over medium heat. Cook until light brown. Soak up or drain excess oil.
2. Add sesame seed oil, julienned carrots, shredded cabbage and green onions, in that order and cook until vegetables are slightly wilted.
3. Loosen noodles to separate, add to skillet and gently mix and toss. Sprinkle dashi, soup base, for additional flavor.
4. Drizzle over noodles about 2 Tbsp. of shoyu. Continue to mix and toss. Dash of pepper.
5. Sample fried noodles and add more seasoning if desired.
